Next we are taking you to Gukeng township of Yunlin County to check out the bamboo noodle. The focus is not the noodle itself but the toppings.

The chili peppers, shitake mushrooms and shrimp are stir-fried first before the shredded bamboo shoots are added for the great tasting dish called bamboo noodle.

The white bamboos shoot is shredded to resemble noodles, thus the name and, no, it contains no noodles.

Most customers would eat the dish with steamed white rice, for the spicy taste perfectly compliments the rice. The dish looks simple but the key to the great taste is an early rise by the owner to chop off bamboo shoots and peel them right away.

Cutting off the tender tips and starting cutting them into desired shape.

The bamboo shoots are then soaked in salt water for two days to get rid of the bitter taste of the bamboo and to whiten the bamboo.

Before stir-frying, the shredded bamboo shoots are drained first for the soft and refreshing dish to be a successful noodle texture taste experience.
