When we think of pearl milk tea, we think of its black chewy tapioca balls. But have you seen white tapioca balls? Well, you're about to visualize it here on CTS. Let's take you for a fascinating trip to the Yilan's night market, to experience this beverage that will leave your lips sweetened.

The owner of this beverage stand has been around for 3 generations, and customers are loving his creation of "white pearl milk tea". The "white pearls" are one hundred percent handmade, with no artificial coloring.

The "white pearls" are developed from the same kind of starch, from the plant, cassava as the black pearls, just without soaking it in brown sugar. Putting in the pot to boil, the constant mixing is relatively important to keep the pearls from sticking to each other.

After cooking for 15 minutes, these buckets of white pearls are completely done. By adding black tea, and milk to it, the white pearl tea is ready to go. Let's see how the drinkers are reacting to it.

"It's more chewy, and it doesn't get hard even if you put it in the fridge".

Two thumbs up, and she agrees. The constant record of 5 containers of white pearls sold everyday clearly confirms the popularity of the self-made refreshment that will be around for quite some time.
